History of Daftmill Distillery

Daftmill Distillery is located in the Howe of Fife and was founded by brothers Francis and Ian Cuthbert. The planning permission for the distillery was granted in June 2003, and it took until late 2005 to complete the repairs and installations required to convert old mill buildings into the distillery. The distillery received its license to distill on St. Andrews Day 2005, and the first whisky was produced on December 16, 2005.

Seasonal Distillation Daftmill operates on a seasonal basis, aligning its whisky production with the farming calendar. The distillery is active during the quieter winter months and again in mid-summer, reflecting traditional practices that were common in Scotland over a century ago. The distillery uses barley grown on its own farm and water from an artesian well, ensuring a close integration between farming and distilling.

The spent grains, known as draff, are used as cattle feed, while pot ale and spentlees are utilized as fertilizers on the farm. Local Craftsmanship The conversion of the old mill buildings into a distillery was carried out by local craftsmen, with most of the equipment and construction materials sourced from within a five-mile radius of the farm.
