History of InchDairnie Distillery
InchDairnie Distillery is a young and innovative player in the world of Scotch whisky. While they may not boast a centuries-old legacy, their focus on pushing flavor boundaries makes them one to watch.
From Vision to First Cask (2011-2015)
The distillery’s story begins in 2011 with industry veteran Ian Palmer. With over 40 years of experience, Palmer foresaw a gap in the market for a distillery producing high-quality single malt specifically for blenders.
John Fergus & Co, the holding company behind InchDairnie, was established and construction began in 2014 on a greenfield site in Fife, Scotland. The very first distillation took place in December 2015, marking a significant milestone for the ambitious project.
Innovation at its Core
InchDairnie prides itself on being technologically advanced and energy-efficient. Their unique approach starts with the mash filter, a departure from the traditional mash tun, allowing them to extract maximum flavor from the grain.
They also use a hammer mill instead of a roller mill, further contributing to their distinctive character. Even the barley used varies seasonally, with Spring barley reserved for warmer months and Winter barley for the colder ones.
While They Wait, They Experiment
Since their single malt requires time to mature (ideally at least a decade), InchDairnie currently doesn’t bottle their own whisky. However, they haven’t been idle. Their StrathEnry single malt is used for exchange with other distilleries and blenders, allowing them to refine their craft.
In the meantime, they offer a range of innovative grain whiskies like RyeLaw and PrinLaws, showcasing their commitment to experimentation.

With their first single malt slated for release in 2029, the future looks bright for InchDairnie. Their focus on flavor innovation and commitment to using Fife-grown barley ensures a distinctive whisky experience. As their casks mature, InchDairnie promises to be a name synonymous with pushing the boundaries of what Scotch whisky can be.
