As someone who’s visited a fair share of distilleries and has a keen interest in whisky, my experience at Paul John Distillery was nothing short of impressive, deserving a solid 4.7 out of 5 in my books.
From the get-go, the tropical setting of Goa adds a unique charm to the distillery, setting it apart from the many others I’ve visited. The warm Goan ambiance complements the whisky-making process in a way you wouldn’t expect, and it’s palpable from the moment you step in.
The tour itself was a delight. Being a whisky collector, I’ve seen my fair share of distilleries, but the attention to detail here is remarkable. They take you through the entire process, from mashing to fermentation, distillation, and maturation. What stood out for me was their use of indigenous six-row barley, which they source from across India. It’s fascinating to see how this ingredient contributes to the unique flavor profile of their whiskies.
Tasting their range was the highlight, of course. The Brilliance, Edited, and Bold expressions were exceptional, each offering a distinct character – the Brilliance being non-peated, Edited having a hint of peat, and Bold embodying the peated spirit fully. The Classic Select Cask left a lasting impression on me with its elegance and depth.
What I appreciated most was the passion behind the brand. You can tell that they’re not just about producing whisky; they’re about crafting an experience. It’s evident in their experimental approaches, like the Christmas Editions and the Zodiac series. Especially, the Kanya by Paul John, which was a revelation in terms of flavor and complexity.
If I had to nitpick, the only reason I’m holding back from a full 5 is the size of the tour group. A smaller, more intimate group would have allowed for a deeper dive into their processes and philosophies. But that’s just me being particular.
