History of Tipperary Boutique Distillery

Founding and Early Years

The Tipperary Boutique Distillery was founded in 2014 by Jennifer Nickerson, Stuart Nickerson, and Liam Ahearn. Initially, the distillery focused on releasing independently bottled single malt Irish whiskeys. The founders’ expertise and passion were instrumental in setting the foundation for the distillery’s success.

Jennifer Nickerson, with her background in accounting and tax advisory, took the role of Managing Director. Her father, Stuart Nickerson, a whiskey consultant with over 40 years of experience in the whiskey industry, and Liam Ahearn, a farmer with deep roots in Ballindoney Farm, formed the core team​​.

Development and Expansion

In 2020, the distillery marked a significant milestone by opening its first distillery in more than 150 years. This development was overseen by Jennifer Nickerson and allowed the distillery to begin producing its first whiskey from home-grown barley.

The distillery is located in the Golden Vale, known for its fertile soil and pure water, providing excellent conditions for growing barley. The water used in their whiskies and gins is sourced from their own spring on the distillery land​​​​.

Current Operations

Today, Tipperary Boutique Distillery produces a range of products, including their independently bottled whiskeys and Homegrown Barley Single Malt from 2020. The distillery also releases a Farmhouse Gin, distilled in a copper pot still, with recipes from Jennifer Nickerson’s mother. The distillery prides itself on its grain-to-bottle principle, ensuring quality and authenticity in their products.

Future Prospects

Looking towards the future, the distillery is considering expanding its product range, including white spirits. There are also plans to develop their “farm to bottle approach further” and explore new markets. The distillery’s focus on sustainable practices and local ingredients continues to be a significant part of its ethos​​.

The Tipperary Boutique Distillery is an integral part of the local community, with plans to employ up to twelve people, ideally from the local area. Additionally, in 2023, the distillery moved towards becoming solar-powered, reflecting its commitment to sustainable and environmentally friendly practices​​​​.
