History of Wildcat Distilling Co.

Founding and Location

Wildcat Distilling Co., nestled in the small town of Duncombe, Iowa, is a testament to the rich farming heritage of its locale. The founders, Brad and Alissa Lemke, grew up on a picturesque farm near Duncombe, captivated by the “Wildcat Cave” in the vicinity, a natural limestone formation with a fascinating history.

The Distillery’s Origins

This Iowa-based distillery owes its inception to the Lemke siblings’ connection to their land and its stories. The cave, known for its historical significance, including tales of mountain lions and speakeasies, played a pivotal role in the founding of Wildcat Distilling Co. The distillery stands as a tribute to these local legends, aiming to capture the essence of Iowa’s history in every bottle.

Flask & Barrel Review of Wildcat Distilling Co.

I recently had the pleasure of visiting Wildcat Distilling Co., and I must say, as a seasoned whiskey collector who’s been on numerous distillery tours, this experience was a standout one. I’d rate it a solid 4.7 out of 5.

Firstly, the ambiance of the place struck a perfect balance between rustic charm and modern comfort. The staff, especially during the Guided Tasting Experience, were knowledgeable and passionate, which added a personal touch to the tour. They not only knew their whiskey but also had great stories about the distillery’s history.

The presentation part of the tour was informative without being overwhelming. As someone who appreciates the finer details of whiskey-making, I found their explanation of the distillation process particularly insightful. They covered everything from the choice of grains to the aging process, providing a comprehensive overview without getting too technical.

Tasting their range of whiskeys was, of course, the highlight. Each whiskey had its unique profile, and I appreciated the balance and complexity in flavors. As a collector, I found their Tillmans Small Batch Whiskey notably impressive. It had an engaging aroma and a smooth finish, showcasing the quality of their craft.

The post-tour experience was relaxed and inviting. The option to hang out, enjoy a cocktail, and browse their merchandise allowed for a leisurely end to the visit. It didn’t feel rushed, which I often find in other distillery tours.

My only nitpick, and the reason for the 4.7 rating, is the limited food options. While the focus is understandably on the whiskey, a few more snack options would have been welcome.
