Very sweet from the sherry, with a hint of salt and quite some tannins. Fairly dry.
Finish
Very long, drying and becomes very bitter.

Notes of rye and wood spice emerge, charred maple, light hint of molasses.
Taste
Sweet/briny olive notes intensify; tastes richer, warmer: sweet maple wood and olives.
Finish
Long and briny, with some soot. After a while the finish shortens.

Sweet and rather jammy again, mainly dark fruits. Forest fruit jam. Fig compote and caramelized sugar. Port syrup.

Long, still very sweet fading to drier notes.

Red cherries, sugar plums and black currants stack together and form a round and rich sweetness.
Taste
Dark plums, cherries, figs, raisins and cranberries decompressing and are all thrown into the mix.
Finish
Tone mellowing down, fishing out assorted fruits from a chocolate hotpot – strawberries, pears, apples, orange and peach.
